French Onion Sourdough Focaccia Recipe
French Onion Sourdough Focaccia combines the delightful flavors of caramelized onions with the tangy goodness of sourdough bread. This recipe yields a beautifully crispy and golden crust with a soft, fluffy interior. Perfect for a savory snack or a delicious side dish, this focaccia is sure to impress!
Ingredients
For the Dough
500g all-purpose flour
350g water
100g active sourdough starter
10g salt
2 tablespoons olive oil
For the Caramelized Onions
2 large onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon sugar
Salt, to taste
Additional Toppings
100g grated Gruyère cheese (or a mix- I grated mozzarella and parm for my bread)
Fresh thyme leaves for garnish
Coarse sea salt for sprinkling
Instructions
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour and water to form a shaggy dough. Cover and let it rest for 30 minutes (autolyse).
Add the active sourdough starter and salt to the dough. Mix well until fully incorporated.
Knead the dough by hand or using a stand mixer until it becomes smooth and elastic, about 10 minutes.
Transfer the dough to a lightly oiled bowl. Cover it with a damp cloth and let it rise at room temperature for 4-6 hours, performing stretch and folds every 30 minutes for the first 2 hours.
I like to refrigerate my dough overnight to develop it’s flavor, but that is optional
Step 2: Caramelize the Onions
In a large skillet over medium heat, melt the butter with the olive oil.
Add the sliced onions and sprinkle with sugar and a pinch of salt.
Cook the onions, stirring occasionally, until they are deeply caramelized, about 30-40 minutes. Set aside to cool.
Step 3: Assemble the Focaccia
Once the dough has doubled in size, gently transfer it to a well-oiled baking sheet or pan. If you refrigerate. Let it come to room temp for a couple hours
Using your fingers, gently dimple the surface of the dough.
Spread the caramelized onions evenly over the dough. If using, sprinkle the grated cheese on top.
Drizzle olive oil over the focaccia and sprinkle with fresh thyme leaves, fresh cracked pepper and coarse sea salt.
Step 4: Bake the Focaccia
Preheat your oven to 450°F (230°C).
Bake the focaccia for 22-28minutes, or until the edges are golden brown and crisp.
Remove from the oven and let it cool slightly before slicing.
