Sourdough Discard Garlic Naan

I am thrilled to share my recipe for garlic naan made with sourdough discard!

The flavor of sourdough discard naan is truly unique and delightful. The sourdough discard imparts a subtle tanginess that elevates the traditional naan, giving it a slightly complex and rich flavor profile. When combined with the aromatic garlic, the result is a naan that is both savory and satisfying, with a depth of flavor that makes it stand out. This combination creates a naan that is perfect for pairing with a variety of dishes or enjoying on its own.

Ingredients:

  • 150 grams (approximately 2/3 cup) sourdough discard

  • 110 grams (1/2 cup) warm water

  • 150 grams (2/3 cup) plain yogurt

  • 500 grams (4 cups) all-purpose flour

  • 10 grams (2 teaspoons) active yeast

  • 10 grams (2 teaspoons) salt

  • 35 grams (3 tablespoons) olive oil

  • 30 grams (2 tablespoons) melted butter (optional, for brushing)

Instructions:

  1. Activate the Yeast

    • In a small bowl, combine the yeast with warm water and let it sit for 5-10 minutes until it becomes frothy.

  2. Combine Wet Ingredients

    • Mix the sourdough discard, yogurt, and the activated yeast mixture together, stirring until smooth.

  3. Incorporate Dry Ingredients

    • In a separate bowl, whisk the flour and salt together. Gradually add the flour mixture while mixing with a stand mixer fitted with the dough hook attachment. If you like, you can grate a couple of fresh garlic cloves into the mix. Knead for 5-7 minutes (or by hand for about 12-15 minutes).

  4. Allow the Dough to Rise

    • Cover the bowl with a damp cloth and place it in a warm spot to rise for 1-2 hours, or until the dough has doubled in size.

  5. Shape the Naan

    • Divide the dough into about 10 equal pieces. Roll each piece into a ball and let them rest for 30 minutes. Then, flatten them into round or oval shapes, rolling out to approximately 1/4 inch thick.

  6. Cook the Naan

    • Preheat a skillet over medium-high heat. Place the rolled dough onto the hot skillet and cook for about 1-2 minutes until bubbles form on the surface. Flip it over and cook the other side until golden brown spots appear.

  7. Finish with Butter and Fresh Herbs

    • If desired, brush the cooked naan with melted butter and chopped fresh parsley for extra flavor!

  8. Serve

    • Enjoy your naan warm with your favorite curry or dip.
